Bustling breakfast spot full of locals. I think I was the only tourist in the whole establishment. The soup came out quickly along with a bowl full of fresh greens and herbs. The meal was incredibly flavorful - I ordered the crab and fermented duck egg but there are SO many options ranging from just the basic soup (crab pieces only) to the base soup with any combination of sausage, meat, tofu, and mantis shrimp that you could think of. Very reasonably priced as well. The special bowl (with everything) is the most expensive thing on the menu at only 80k. The tables are also kept clean and there is an assortment of sauces and additions that you can put in the soup to make it your own. Quite busy in the morning but you won’t have to wait long for a table! I didn’t have to but noticed just a few others that came later standing by the door.

Co Hoan's noodle soup is famous for its mantis shrimp bun rieu. It actually just went through a hygiene drama recently, which explains the move to this much cleaner and nicer location. The bun rieu here is super traditional—thin noodles in a rich, flavorful broth with a strong kick of shrimp paste. The portions are a bit on the smaller side, but even though the place gets packed, the service is incredibly fast.

Food came so quickly. Got the bún riêu with fried dough sticks (35k VDN in total, > $2 AUD), and wow the broth is just so satisfying!! Even better with some herbs on top. Came for breakfast, this is a very local restaurant - I was the only tourist from what I could spot.

Very refreshing soup, with umami from crab taste and sourness from tomato. Might be too fishy for some people. This is a very local and down to earth eatery, so can’t expect the service to be great, but staff are considered friendly. **take note that the egg is balut
